Cochelins are small flaky pastries, traditionally in the shape of men, dogs or roosters. Dating back to the Middle Ages, they were sold on New Year's Eve to be given to friends and family. Godparents gave their godchildren Cochelins on their wedding day. Today, the tradition is has been renewed by the bakers of Chartres, and you can see Cochelins for sale around Christmas.
