Feuille de Dreux

Easily recognizable by the chestnut leaves that are draped over this round, white cheese, Feuille de Dreux comes from the dairy farm region of Beauce.It’s traditionally served at the end of the meal or as a hearty snack. A soft-centered cheese, it is made with low-fat milk and has a soft rind. Made according to traditional methods, the cheese is placed in molds, salted and left to age for about three weeks. During that time it will be turned by hand until it achieves just the right firmness. Milder than Camembert, you’ll find Feuille de Dreux in Paris cheese shops as well.
